Cookies have never been so simple. I rarely think about cookies and cakes being in the same sentence, and they are not close to each other on my desert spectrum. I was on Pinterest as usual when I stumbled upon an amazing idea, Cake Mix Cookies. Making cookies out of cake mix seemed like a dream. I chose to test out six different types of Cake mix Cookies, strawberry coconut, chocolate mint, lemon white chocolate, m&m, butter pecan butterscotch, and red velvet white chocolate.
The recipe for these types of cookies are easy and self explanatory. It requires ½ cup of vegetable oil and 2 eggs, from there you get to choose the type of cake mix you use and your mix-ins. This recipe really allows you to pull out your creative side and attempt as many combinations as you want.
To start off you pour the cake mix of your choice into a bowl, then add the vegetable oil and eggs. Once they are all mixed together you pour in 1/2 cup of your desired mix-ins. This is where you can get creative. Whether it’s Andes Mints or coconut you can add any of your favorites to top off these cookies.
Once the dough was all mixed together, I used two spoons to make foosball size clumps and placed them on a pan. The cookies only take about 10-12 minutes to bake and the overall time I spent on these was about 30 minutes per flavor of cookie.

The strawberry coconut cookie was the most popular; however my personal favorite was a tie between the lemon white chocolate cookie and the butter pecan cookie with butterscotch chips.
